Ingredients

11 pieces osso bucco (veal shank), 2½ inches high
Salt
Pepper
Flour
Vegetable oil
4 sprigs fresh thyme
10 individual whole peppercorns
2 bay leaves
2 bulbs garlic
1 bunch celery
2 medium white onions
4 medium carrots
2 cups red wine (Burgundy)
2 gallons veal stock
Gremolata (lemon and lime zest, parsley and minced garlic)
Risotto, if desired

Directions

  1. Liberally season each veal shank with salt and pepper, then dredge in the flour. In a frying pan, add the vegetable oil and sear the veal shanks, 2 or 3 at a time. Clean the pan before searing each new batch of veal.
  2. Make a sachet of the thyme, peppercorns, bay leaves and 1 of the garlic bulbs, cut horizontally (place the items in a square of cheesecloth, then tie it closed with a length of butcher’s string); set aside.
  3. Preheat the oven to 250°F. Dice the celery, onions and carrots; slice the remaining garlic bulb in half. In a large pot, heat the vegetable oil and sauté the celery, onions, carrots and garlic until the vegetables are translucent. Add the red wine and reduce until all the liquid has evaporated.
  4. Add the veal shanks and the veal stock. Drop the sachet into the pot and bring the mixture to a boil. Remove the pot from the heat; place it in the oven and braise the veal shanks for 2 to 3 hours, until the veal is tender to the touch. Place the veal shanks on plates (serve over risotto, if desired) and drizzle with sauce from the pan. Garnish with gremolata and serve immediately. (Serve the veal shanks with espresso spoons, which can be used to remove the bone marrow.)
