Collard greens from the greenmarket are light rather than leaden, and the cocktails are crafted from small-batch producers and doused with artisanal bitters. Seating is limited, and it's first-come, first-served, sometimes requiring a musical chairs–style aggressiveness. Nearby is owner Jacques Gautier's Latin American restaurant Palo Santo, whose rooftop garden will supply some of the produce.
