When a farmer and a fishmonger pair up, the happy result is Gramercy Farmer & The Fish, a modern, polished bistro near Union Square. The farmer is chef and co-owner Michael Kaphan. His fishmonger partner, Edward Taylor, is the president of Down East Seafood. They also founded Purdy’s Farmer & The Fish in Westchester County, abutting the acreage that supplies a majority of the menu’s produce. American specialties on the menu include crunchy clam rolls and tuna burgers with wasabi aioli at lunch, monkfish Milanese and dry-aged strip steak at dinner, and an impressive raw bar all day long.
