Nightingale 9 is named for the old Brooklyn phone exchange in this area (NI9). The food is Vietnamese but Brooklyn comes through in other ways—the austere DIY design, the young, hip crowd gathered at communal tables, the ingredients purchased from the local farmers' market. Chef Rob Newton, from Arkansas, showcases his Southern roots at his first restaurant, Seersucker, and while there are Southern touches at Nightingale 9 (catfish with peanuts; Hudson Valley ground pork wrapped in collard greens; fried rice with country ham, mustard greens and soybeans), his passion for Vietnamese food comes through loud and clear in the spicing. Newton has worked with Asian chefs in the past (Sottha Khunn at Le Cirque, Floyd Cardoz at Tabla) and did some traveling in Vietnam to cement his knowledge of classics and street food. Dishes here are delicate and yet bursting with flavor.
