Great bands are born when the right musicians come together, just like the sandwiches at Heritage Meat Shop in the Essex Street Market. Crusty baguettes from Pain d'Avignon (a supplier for Eleven Madison Park) are combined with Heritage's meats from breeds raised at small family farms and domestic cheeses from Saxelby Cheesemongers. All these ingredients are provided from neighboring stalls at the market. Patrick Martins founded Heritage Foods USA in 2001 as the sales and marketing arm for Slow Food USA; this shop replaces the 70-year-old Jeffrey's Meat Market. Sandwich ingredients are written on a blackboard, including a list of fun condiments such as Devil Sauce, a spicy chutney. With smoky-and-sweet aged ham and sharp cheddar, it rocks.
