Black Seed Bagels

It's about time someone opened an artisanal bagel shop in Manhattan, hand-rolling the dough, dropping the doughnut shapes in boiling water and then baking them in a wood-burning oven right before your eyes. No automation here! Demand exceeded supply almost as soon as it opened in April, the insanity reaching such heights that the owners, Noah Bernamoff (Mile End) and Matt Kliegman (The Smile) had to close for a few days to regroup. The lines have calmed down now, and there's usually no wait at all if you just want to buy a dense poppy, pumpernickel or everything bagel ($1.50 each). If it's a bagel sandwich you're after, it takes a little longer for your name to be called; around a dozen seats at little tables and a window counter are up for grabs if you want to stay on the premises. Cream cheese, jam and almond butter are house made, and there's a great selection of smoked and cured fish and hearty vegetable salads.
