    Japanese chefs in the East Village are as crowded and confusing a field as the mayoral race. But one candidate has risen above the rest for special attention: David Bouhadana, the under-30 toque at Sushi Dojo. He's not Japanese, but he's got the technique down, having studied in Japan as well as with masters at Morimoto and Hatsuhana. He has respect for authenticity (no California rolls) and quality (expensive wasabi root, not wasabi paste). The former Polonia space is unrecognizable, now seamlessly playing the part of a classic, wood-grained sushi bar. In addition to ultra-fresh jewels of raw fish are polished hot plates of tempura, grilled shishito peppers, sake-steamed manila clams and deep-fried whole flounder. With only 36 seats (14 at the bar), reservations are highly recommended.
