Part of the Momofuku food empire, Booker and Dax does for the artisanal cocktail what its sister restaurants did for ramen—give it a unique spin that makes the most of new cooking technologies and outrageous flavor pairings. The menu focuses on “molecular cocktails” made with liquid nitrogen, red-hot pokers and centrifuges—concoctions like the “Mustachi-ode” (nardini amaro, becherovka, bourbon, egg white and pistachio) and the “Son of a Peach” (mezcal, tequila, canned peach, lime and umeboshi vinegar).
