"It's not a speakeasy," says Tom Chadwick of his new Williamsburg bar. Even so, the breezy cedar-paneled space boasts plenty of cocktail-geek trappings, such as Kold-Draft ice, house-made Amer Picon (a bitter spirit) and more than 18 from-scratch syrups. The barkeeps, some of them veterans of Prime Meats and Death & Company, mix drinks like the Jet Pilot (a 1958 tiki classic with rum, lime juice and falernum). Also look for wine--the list focuses on small vineyards--and local beers. A menu of cheeses and cured meats is in the works.
