If you want something done right, you have to do it yourself--and in the case of chef Michael Ayoub"s restaurant, Fornino, that means growing his own pizza toppings. Ayoub is sprinkling his wood-fired brick-oven pies with herbs and vegetables grown in the restaurant"s greenhouse. He"ll combine freshly picked arugula, for example, with eggplant, bresaola and Parmesan, and locally grown figs with prosciutto and Gorgonzola. The chef seems to be one serious multitasker: Along with doing the gardening and the cooking, he also crafted all the blown-glass light fixtures in the dining room and put together a list of 20 Italian wines for less than $20 each--which also qualifies him as a master sommelier in our book.
