It is always comforting to walk into a dining room, peer into a pristine open kitchen and see that the staff-to-diner ratio is about 1:1. At this spare restaurant, food comes before flash. Behind the long sushi counter, an army of cooks slice shimmery, beet-red triangles of tuna, drape tender slivers of eel over perfectly sticky mounds of rice and assemble texturally ingenious shrimp rolls (tender shrimp with crisp, battered crusts wrapped in soft, freshly made crêpes and served with a thick peanutty sauce). When raw fish isn't enough, you can fill up on richly marbled, wasabi-rubbed lamb chops and kickin' wasabi-mashed potatoes.
