The savvy AvroKo design team has come up with a concept that will thrill every woman in town. Never mind the walnut floors and onyx tabletops--Sapa has six restrooms. Which will leave everyone more time to enjoy the real attractions: a gorgeous minimalist dining room and a French-Vietnamese menu by Patricia Yeo, formerly of AZ. Sapa"s "roll bar" features variations on spring and summer rolls, including ones with raw wild salmon and cucumber, or foie gras and duck. Among the adventurous main dishes is cider-braised monkfish with salsify and sugar-cane-marinated scallops. Inventive cocktails are available to match, and of course, you can drink as much as you can handle.
