How do you pull off a sultry ambience in an industrial-chic space with sheet metal flooring and cinder block walls? At Galapagos, credit the cascading red curtains, circular banquettes above a 1,600-square-foot pool of water, inventive cocktails and the frequent burlesque performers (who, ahem, also pull it off). Starting this winter, every Saturday will feature Floating Cabaret, an event hosted by frisky emcees Olga and Bjorn with music, dancing, acrobatics and free haircuts.
