Named after the popular nickname for the 1919 Prohibition Act—the anti-alcohol bill that that dried up New York City's many active whiskey distilleries—the Noble Experiment distills small-batch whiskeys, made from local ingredients and entirely free of artificial coloring or preservatives. Locals can check out the process (and sip the results) at the distillery's weekly Saturday afternoon tours and tastings.
