The 5,000-year-old art of cheese making is on display at Beecher's Handmade Cheese, where you can press your nose against the glass and see pasteurization at work. Ensuring purity, the milk comes from small local herds that are not treated with bovine growth hormones. Beecher's is justly famous for its signature mac and cheese, developed at its flagship operation in Seattle's Pike Place Market. On the same level as the cheese kitchen are a high-end retail store, coffee bar, cases of cheese and charcuterie, diverse prepared foods and grilled-to-order cheese sandwiches. In the cellar downstairs, which opens at 5pm, you can observe the cheese aging in a cave, as well as have freshly made salads, seasonal soups, pasta, braised short ribs and cheese plates brought to your table. It's a stylish hideaway for a romantic tête-à-tête or an after-work drink from a wine list that focuses on the West Coast and includes a few nods to New York State producers as well.
