Chloe Coscarelli, a vegan cookbook author, social media star and the first vegan chef to win the Food Network's Cupcake Wars, opened her first fast-casual restaurant, By Chloe, in 2015 with Samantha Wasser of ESquared Hospitality. The Greenwich Village space is chic and airy, with ordering done at the counter and a chance to peruse Chloe's cookbooks while you wait. Seating is first come, first served. Everything is plant based, from soups, salads and sandwiches to cookies, pastries, ice cream and, of course, cupcakes. The guac burger is particularly satisfying, a patty of quinoa, sweet potatoes and black beans topped with corn salsa, guacamole and chipotle aioli. Even the fries here are better for you, air-baked rather than fried, and paired with beet ketchup.
