Seamus Mullen has a strong following at the exceptional Tertulia in the West Village and opened his first El Colmado in Gotham West Market in 2013. The award-winning chef and Spanish food expert followed up with this Meatpacking District tapas bar and butcher shop in 2015, bringing freshly butchered meats back to the neighborhood. The High Line runs overhead and young, barhopping revelers have the run of the street, making El Colmado Butchery feel like a secluded oasis. Even if you're not meat shopping, come anyway for the fabulous and extensive Spanish wine and sherry list and snacks like mixed mushrooms roasted in chicken drippings, grilled octopus, Ibérico ham croquettes and smoked deviled eggs.
