François Payard is a third-generation pastry chef, a master when it comes to the art of the tart. His downtown bakeshop stocks everything from brioche to lemon biscotti candles, savory sandwiches to cookbooks. His FPB logo is on just about all of the packaging, even on specialty teas and chocolate bars. A few small wooden tables are stationed near the display cases, but most locals stop in for coffee and a snack to go. Payard and his partner, mega-millionaire Marlon Abela, have plans to roll out more FPB branches across the City.
