Hudson & Charles, a progressive, whole-animal butcher shop in the West Village, extended their business into a sweet white-tiled café next door. Meat, naturally, is the centerpiece. Beef, pork and poultry are sourced from local, animal-welfare-approved farms visited by co-owners Jason Fox and Kevin Haverty. Come with an appetite since chicken liver mousse, chicken parm sausage, burgers and thick-cut beef fat fries are supersized. There are also salads, pies and a brief list of wine and beer.
