If Tom Valenti’s signature salmon gravlax with chickpea pancake, caviar and crème fraîche hadn’t been on the menu at Oxbow Tavern, there might have been trouble. It was the most beloved dish at Ouest, the chef’s long-running restaurant on the Upper West Side, which closed in 2015. Locals are overjoyed to have him back, this time in a more casual setting. Still, Valenti’s fine-dining training comes through in pan-roasted halibut, a crispy fried chicken sandwich and an exemplary burger.
