At the elegant 701West, on the Edition Hotel’s 11th floor, Fraser focuses on a deluxe prix-fixe menu featuring sea urchin risotto, tilefish with lobster-coxcomb jus and rotisserie guinea hen with truffles. The sommeliers know the perfect wine for each course. For a more casual experience, head to the 9th floor, where there’s a leafy, serene brasserie (full name, The Terrace at Edition and Outdoor Gardens) open for breakfast, lunch and dinner. Fraser especially impresses at this spot with carrot Bolognese pasta and cacio e pepe rigatoni with broccoli and dried tomato.
