Italian owner Michele Colombo strives to serve panini the authentic Milanese way, lightly toasting the sandwiches instead of pressing them, slicing the prosciutto, mortadella, coppa, speck, salami and bresaola to order (workers will give you tastes if you can't decide). The panini are crisp and compact and can be dressed up with a number of luscious Italian cheeses. There is also a full range of coffee drinks, breakfast brioche and sweet cornetti (the Italian version of croissants), tiramisu and toast spread with Nutella. Handy to SoHo shopping, Salumè provides casual seating in a contemporary, upscale deli setting.
