Manzo (it’s the Italian word for “beef”) is the butcher’s restaurant within Eataly. For six months, the meat-centric eatery will be featuring special dishes that result from collaborations between head chef Adam Hill and other guest chefs, who will be on hand at least one night to both prepare and serve their dish. The special item will then remain on the menu for that month. December’s invitee is Michael White of Altamarea Group, and upcoming chefs include Atoboy’s Junghyun Park, Boulud Sud’s Daniel Boulud and Travis Swikard, Covina’s Tim and Nancy Cushman, and Root & Bone’s Janine Booth.
